Curried Tofu Scramble with Spinach
- 1 tsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 container firm or extra firm tofu, pressed and crumbled
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp cumin (optional)
- salt and pepper to taste
- 2 tomatoes, diced
- 1 bunch fresh spinach
Preparation:
Sautee the garlic and onion in olive oil in a large skillet. Allow to cook for 3 to 5 minutes, or until onion turns soft. Add remaining ingredients except spinach and cook, stirring frequently for another 5 minutes or so, until tofu is hot and cooked, adding more oil if needed.
Add spinach and cook a minute or two, just until wilted, stirring well.
Makes two servings of tofu scramble.

Tofu Scramble with Spinach
- 2 tbsp olive oil
- 3/4 cup sliced fresh mushrooms
- 2 tomatoes
- 2 cloves garlic, minced
- 1 bunch spinach, rinsed
- 1 pound firm or extra firm tofu, well pressed and crumbled
- 1/2 tsp soy sauce
- 1 tsp lemon juice
- salt and pepper to taste
Preparation:
Sautee tomatoes, garlic and mushrooms in olive oil for 2 to 3 minutes.
Reduce heat to medium low and add spinach, crumbled tofu, soy sauce and lemon juice. Cover and cook for 5 to 7 minutes, stirring occasionally.
Sprinkle with a dash of salt and pepper before serving.
Quick Tofu Scramble with Salsa
- oil
- 1/2 onion, diced
- 2/3 cup vegetable salsa
- 1 block firm or extra firm tofu, drained and chopped into one-inch cubes
- 1/3 tsp turmeric
- 2 tsp nutritional yeast (optional)
- salt and pepper to taste
Preparation:
In a large skillet or frying pan, sautee the onion in a few teaspoons of oil for 2-3 minutes until just barely soft. Add tofu and allow to cook, stirring frequently and adding more oil as needed.
Add the turmeric and nutritional yeast, and stir until tofu is well coated. Add salsa and cook for another minute or two, stirring frequently just until salsa is hot and well combined with the tofu. Season generously with salt and pepper.
This is a very simple recipe for tofu scramble. You may add in any of your favorite fresh vegetables (I like bell pepper and mushrooms in tofu scramble), or, wrap in a flour tortilla for a vegetarian and vegan breakfast burrito!
