Campfire Muffins

6 oranges
2 (7 ounce) packages blueberry muffin mix (or any flavor)

Directions:
Cut oranges in half.
Scoop out the orange segments to eat alone.
Reserve the hollow peel shells.
Prepare the muffin mix according to the package directions.
Fill the orange peel cups half full of batter.
Wrap each one loosely with heavy duty aluminum foil.
Place in hot coals, making sure that the batter side stays up.
Cook 6-10 minutes until muffins are done.
Adding a few berries to the batter adds excellent flavor.
10 Note: Use 3 oranges per package of muffin mix.

Grilled Taters

House Seasoning
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Taters
3 golden delite potatoes, sliced into 1/4 inch coins
1/4 large sweet onion, sliced
1 1/2 tablespoons salted butter, melted
house seasoning, to taste

Directions:
Preheat a gas grill to High.
On two pieces of foil (stacked), arrange potatoes in three rows overlapping the edges.
Top with onion slices, a generous amount of House Seasoning, and melted butter.
Place a third piece of foil on top and crimp the edges with the bottom two pieces to form a sealed packet.
Using the underside of a baking sheet for "transportation," bring the packet to the grill and place on the medium rack (excluding the baking sheet).
Cook with lid closed for 15-20 minutes, and then open the lid for another 10 minutes or until edges of potatoes are getting crispy and brown. Serve immediately.

Campfire Kitchen

1/2 cup ground beef
2 slices onions
salt and pepper
1 slice green pepper
1/2 stalk celery, chopped
1 cup shredded cabbage
1/2 medium carrot, grated
1 medium potato, sliced 1/4 inch thick

Directions:
Shape meat into a large patty, place onion on a large piece of foil, top with meat patty, salt and pepper, potatoes, green pepper, cabbage, celery and carrot. Grill for 1 hour. Or 350 degrees for 1 hour.

Crunchy Apple Rings

1 granny smith apple
3 tablespoons peanut butter
1/2 cup Honey Bunches of Oats cereal (or your choice of cereal)

Directions:
Wash apple. With a knife or apple corer, remove the core of the apple.
Slice into rings about 1/4 inch thick so that the apple has a hole in the middle.
Spread smooth or crunch peanut butter on one side of each apple ring.
Place on plate and sprinkle with Honey bunches of oats cereal, or any cereal of your choice.
